Eating light and healthy again!
This may seem allot of crap, but it's worth it!!
You can use left-overs for a veggie stir fry!!
Spring Rolls
recipe by Me and Mom
ingredients:
As much rice paper (or nori sheets) as you want
1 red bell pepper
1 c. chopped iceberg lettuce
1 apple, chopped lengthwise
1 c. cubed pineapple, canned is fine
1 c. onion, put in some water to take out some of the acidity
1 c. cilantro, roughly chopped
1 c. bean sprouts
1/2 of a pickled radish
1 c. frozen, uncooked, shrimp
1 c. crab meat, cut lengthwise
1 avocado, cut lengthwise
Any other vegetables you wish to add in. This may seem weird, but
adding thinly cooked eggs julienned and cooled is a yummy idea too!!
1. Cook the shrimp in boiling water for about 2 min. DO NOT OVER COOK THEM!!!
Rinse them in cold water, peel them if you have to, and set aside.
2. Arrange the cut vegetables and proteins on a large dish. Cut the shrimp in half if desired.
3. In a shallow bowl, add enough water to dunk the rice paper, then heat it until warm. About 1 min in the microwave.
Eating Spring Rolls the Fun Way 101:
As you can see on the picture above, this is a great light meal to enjoy with your friends and family at the dinner table! Arrange small, flat dishes that are just the right size to roll up your rolls. About a 10 inch dish would be good. Take one piece of rice paper, dunk it in the warm water, lay it on the dish, put the filling inside, and roll up. Make sure you roll it up nice and neat, but do not roll it up too tight or it will rip! Eat with the fish sauce or any other condiments that seems to go well with the rolls! Fish Sauce

ingredients:
1/2 c. fish sauce
3 T. pineapple juice
2 limes, juiced
1 T. agave syrup
3 garlic cloves, minced finely
1 jalapeno, minced finely
1 T. chili sauce
1. Combine all and stir well.
