Spicy Coconut Bread Pudding

Well, I REALLY want to eat bread pudding....
So I will!

Spicy Coconut Bread Pudding

As I said before, I love Aarti!! This is one of her recipes!!
(Of course, I fixed it to a vegan thang!)



ingredients:
3 T. ground flax seeds plus 9 T. water, whisk and let sit until goopy
1/4~1/3 c. agave nectar
1 (13.5oz) can coconut milk
3/4 c. soy milk
12 t. pumpkin spice
1 baguette, cut into 1-inch chunks
1/2 c. raisins, soaked in hot water for 15 min
Handful nuts, whole or chopped

1. Oil a 8 x 8 inch baking dish and preheat the oven to 350
2. Whisk together the flax mixture, agave, coconut milk, soy milk, salt, and spices.
3. Add the bread cubes and the raisins and let them soak for about 15 min
4. Pour the mixture in the baking dish and sprinkle it with the nuts. Bake for 35 min or until the top becomes toasted and golden.

Serve warm with ice cream!!!
