After a long hot day in the sun, you really wants some food...!
Vietnamese Pho
Mom's recipe
This recipe really depends on how much people is going
to eat this...Mama used handfuls of every vegetables and meats and it made about
2~3 servings. This is really refreshing and nice!!
ingredients:
Rice noodles (1 handful=1 person), soaked in water for about an hour and boiled in water for about 1 min.
Frozen shrimp, (medium size) thawed
Bok choy, 1 handful
Broccoli, 1 handful
Onion, cut into very thin slices and soaked in water (use about 1/4~1/3 of the onion)
Cilantro, we love this stuff so we used 1 handful, chopped roughly
1 Green onion, minced into little bits
1/2 c. Fried fish cakes, preferably round, boiled in water for about 1 min.
1/2 c. Crab meat, cut in halves
Bean sprouts, one handful
2 limes, save one for the broth and 1 for a condiment
4~5 leaves of sweet basil, again save half for the broth and half for a condiment
2 T. fish sauce
1 jalapeno, sliced into thin slices
2 cans slow-sodium chicken stock
1/4 t. freshly ground ginger
1. In a large pot, combine stock, ginger, 1 lime, crab meat, boiled fish cake, half the sweet basil, and fish sauce. Boil on med. high heat until it makes a nice broth. About 5 min.
2. While the broth is cooking, boil the bok choy and the broccoli for about 1 min. Take them out and rinse with cold water to stop the cooking. Set aside
3. In the same water, or new, add the shrimp and boil that for about 1 min or until it is pink. DO NOT OVER COOK THE SHRIMP!!!! OR ELSE IT WILL TASTE LIKE AN ERASER!!!!
4. Ok, now assembling time!! In a large bowl, add the noodle, bockchoi and broccoli.
5. Pour some of the broth in the bowl, wait for 1~2 min., and pour it back into the hot pot again. Do this for about 3 times or until the noodles are soft and chewy!
6. Garnish with bean sprouts, cilantro, shrimp, onions, and green onions and serve !
YUM YUM!!! Dip the veggies and the meats with some hoisin sauce, mixed with sriracha! Don't forget to add some of the condiments if you want a stronger flavor!!!!!
