BananaZ!

Diet Day 1
Dr. Oz says that gluten could cause bloating
fer some people, and I'm one of those people...
Obviously that's not a good sign, so I got some
all-purpose gluten free flour!! I didn't get the Bob's Red Mill thang
but I got the King Arthur brand. I guess it's almost the same thing...

Crunchy Munchy Banana Bread
recipe adapted from Ina Garden (Veganized)



ingredients:
1 c. all-purpose gluten free flour
1 t. baking powder
1/2 t. baking soda
1/4 t. salt
1/4 t. xanthum gum
1 T. ground flax seeds plus 3 T. water, whisk and let it sit fer 2 min.
1/3 c. soy milk
1 c. agave syrup (or you can use sugar)
1/4 c. oil plus 1/4 c. apple sauce
1 t. vanilla extract
1 small mashed banana, or 1/2 a big one
1/2 whole banana, chopped
1/2 c. granola
1/2 c. walnuts, optional
1/2 c. chocolate chips, optional

1. Preheat the oven to 350 and oil a loaf pan. Sift the dry ingredients, sift the sugar if using.
2. In another bowl, combine flax, soy milk, vanilla extract, oil, and apple sauce. Mix well.
3. Make a well in the dry ingredients and slowly pour in the wet mixture once at a time. Mix well.
4. Fold in the whole bananas, nuts, and optional ingredients
5. Pour in the batter in the loaf pan and bake for 25-30 min. until golden brown. When you stick a tooth pick in the loaf, it should still be a little wet from the chopped bananas. The bread will be slightly firm and it will bounce back when you press at it gently.

You can make these as muffins if you want to! Serve at room temp. with some jam or somethen!
