A Special Dinner

9/22/10

Today is a holiday in Korea called Choo-Suk (or the Harvest Festival).
In this particular holiday, we make little balls of rice cakes stuffed with
a sesame seed and honey filling called song-pyeon. This is made with regular rice flour, but
we only had sweet rice flour, which is a lot more sticky and watery than
the regular rice flour. So we made.....

In-Jul-Me (인절미)
recipe made by Me!!

This is a simple, easy, and healthy dessert or snack
in Korea. It's naturally low in sugar and it had a good
amount of nutrients in it like protein and fiber!!
ingredients:
3 1/2 c. sweet rice flour (remember!! Sweet rice flour and regular are different!! DO NOT SUBSTITUTE)
1/4 t. salt
3~4 T. sugar, depending on how sweet you want it
1 big ass tablespoon water
1/2 c. roasted soy bean flour

needed materials:
Steam pot
Cotton cloth, preferably made to use rice cakes. (You can find all the ingredients and the materials in your Asian super market nearest to you!!)
Citrus juicer (you'll see why)

This is such a fool-proof thing that your dad can't mess it up.... even if he burns the toast.

Prep: Set the steamer on med. high with the water about 1/4~1/3 of the way up the pot. Cover the pot! Next, wet the cotton rag with water until it is wet, but not dripping. Sprinkle 1 T. of sugar on top of the rag in order for the rice cake to slide out nicely. Set aside.
1. Combine the dry ingredients except the roasted soy bean flour. Mix well
2. Add the water and rub the mixture WITH YOUR HANDS until it makes little pea sized balls or it clumps together well and does not fall apart. 
3. Make clumps of rice flour with your hands and place it on the rag. Repeat with the rest of the mixture.
4. Place in the steamy steam pot and cover for 20~25 min or until it turns out sticky and no flour is left in the clumps. When finished, place the rice cake dough on a wet bowl and let it cool. Mean while, in a shallow dish spread the soy bean flour out. Set aside.
6. With the citrus juicer, almost punch and knead the dough at the same time. Do this for about 5 min. Keep wetting the dough with water also.
7. Wet a large cutting board with water and spread the rice cake dough out. punch it down until it is about a half inch thick. With a watered cutter, cut cubed pieces of rice cakes and put them into the soy bean flour.

Make sure to coat them evenly and serve warm!!!!

Pizza at the La Grande

Well, I really don't want to screw up my diet,
but sometimes you have to indulge yourself
with naughty food...! >:)

So, last Saturday, me and my mama went for
a trip to Barns and Nobles (one of my most favorite places)
and read books (Duh). About an hour later, we were hungry.
The time was about 4:30 pm and we didn't feel like going home,
so we took a 15 min drive to....... La Grande Orange Grocery!!!!
HANDS DOWN, GREATEST PLACE EVER!!!!!

We ordered the mushroom pizza. Here's the picture of me
eating the pizza:
















The crust was gluten free because I'm a little gluten
sensitive. But it was really good! It was crispy, crunchy,
nutty, and soft... So good.... For the topping
it was obviously some mushrooms and A LOT of cheese!!!!!!!!
AGGGGHH!!!! SO GOOD!!!

After a long hot day in the sun, you really wants some food...!
Vietnamese Pho
Mom's recipe



This recipe really depends on how much people is going
to eat this...Mama used handfuls of every vegetables and meats and it made about
2~3 servings. This is really refreshing and nice!!

ingredients:
Rice noodles (1 handful=1 person), soaked in water for about an hour and boiled in water for about 1 min.
Frozen shrimp, (medium size) thawed
Bok choy, 1 handful
Broccoli, 1 handful
Onion, cut into very thin slices and soaked in water (use about 1/4~1/3 of the onion)
Cilantro, we love this stuff so we used 1 handful, chopped roughly
1 Green onion, minced into little bits
1/2 c. Fried fish cakes, preferably round, boiled in water for about 1 min.
1/2 c. Crab meat, cut in halves
Bean sprouts, one handful
2 limes, save one for the broth and 1 for a condiment
4~5 leaves of sweet basil, again save half for the broth and half for a condiment
2 T. fish sauce
1 jalapeno, sliced into thin slices
2 cans slow-sodium chicken stock
1/4 t. freshly ground ginger

1. In a large pot, combine stock, ginger, 1 lime, crab meat, boiled fish cake, half the sweet basil, and fish sauce. Boil on med. high heat until it makes a nice broth. About 5 min.
2. While the broth is cooking, boil the bok choy and the broccoli for about 1 min. Take them out and rinse with cold water to stop the cooking. Set aside
3. In the same water, or new, add the shrimp and boil that for about 1 min or until it is pink. DO NOT OVER COOK THE SHRIMP!!!! OR ELSE IT WILL TASTE LIKE AN ERASER!!!!
4. Ok, now assembling time!! In a large bowl, add the noodle, bockchoi and broccoli.
5. Pour some of the broth in the bowl, wait for 1~2 min., and pour it back into the hot pot again. Do this for about 3 times or until the noodles are soft and chewy!
6. Garnish with bean sprouts, cilantro, shrimp, onions, and green onions and serve !

YUM YUM!!! Dip the veggies and the meats with some hoisin sauce, mixed with sriracha! Don't forget to add some of the condiments if you want a stronger flavor!!!!!

Spicy Coconut Bread Pudding

Well, I REALLY want to eat bread pudding....
So I will!

Spicy Coconut Bread Pudding
recipe by Aarti Sequeria

As I said before, I love Aarti!! This is one of her recipes!!
(Of course, I fixed it to a vegan thang!)



ingredients:
3 T. ground flax seeds plus 9 T. water, whisk and let sit until goopy
1/4~1/3 c. agave nectar
1 (13.5oz) can coconut milk
3/4 c. soy milk
12 t. pumpkin spice
1 baguette, cut into 1-inch chunks
1/2 c. raisins, soaked in hot water for 15 min
Handful nuts, whole or chopped

1. Oil a 8 x 8 inch baking dish and preheat the oven to 350
2. Whisk together the flax mixture, agave, coconut milk, soy milk, salt, and spices.
3. Add the bread cubes and the raisins and let them soak for about 15 min
4. Pour the mixture in the baking dish and sprinkle it with the nuts. Bake for 35 min or until the top becomes toasted and golden.

Serve warm with ice cream!!!

Corn Bread Pudding

Well, I wanted to make cornbread, and I didn't want
to copy any other person's recipe... This didn't turn
out to be fluffy or dense, it turn out a bit too soggy.
Next time, I would add 1/4 c. more of the flour...

Gluten Free Corn Bread
recipe by Me!!

ingredients:
1/2 c. corn meal
3/4 c. all-purpose gluten free flour
1 t. baking powder
1/2 t. baking soda
1/4 t. xanthum gum
1/4 t. salt
1 c. soy milk
1 T. apple cider vinegar
1 c. agave syrup
1/4 c. canola oil
1/4 c. apple sauce
1 T. flax meal plus 3 T. water, let sit for 2 min
1/2 c. cooked corn kernels (optional)
1/4. c. jalapeno, chopped (optional)
1/3-1/2 c. cheddar cheese (optional)

1. Preheat the oven to 350 and oil the muffin pan with oil. Combine the dry ingredients, you may sift it if you wish to, and make a well in the middle.
2. Mix all the wet ingredients and pour into the dry.
3. Fold any of the optional ingredients in the batter
4. Pour the batter into the greased muffin pan and bake for about 20-25 min or until golden brown and the tooth pick would come out a bit wet. Let the muffins cool for at least about 10 min.

Spring Rolls

This may seem allot of crap, but it's worth it!!
You can use left-overs for a veggie stir fry!!

Spring Rolls
recipe by Me and Mom



ingredients:
As much rice paper (or nori sheets) as you want
1 red bell pepper
1 c. chopped iceberg lettuce
1 apple, chopped lengthwise
1 c. cubed pineapple, canned is fine
1 c. onion, put in some water to take out some of the acidity
1 c. cilantro, roughly chopped
1 c. bean sprouts
1/2 of a pickled radish
1 c. frozen, uncooked, shrimp
1 c. crab meat, cut lengthwise
1 avocado, cut lengthwise
Any other vegetables you wish to add in. This may seem weird, but
adding thinly cooked eggs julienned and cooled is a yummy idea too!!

1. Cook the shrimp in boiling water for about 2 min. DO NOT OVER COOK THEM!!!
Rinse them in cold water, peel them if you have to, and set aside.
2. Arrange the cut vegetables and proteins on a large dish. Cut the shrimp in half if desired.
3. In a shallow bowl, add enough water to dunk the rice paper, then heat it until warm. About 1 min in the microwave.

Eating Spring Rolls the Fun Way 101:
As you can see on the picture above, this is a great light meal to enjoy with your friends and family at the dinner table! Arrange small, flat dishes that are just the right size to roll up your rolls. About a 10 inch dish would be good. Take one piece of rice paper, dunk it in the warm water, lay it on the dish, put the filling inside, and roll up. Make sure you roll it up nice and neat, but do not roll it up too tight or it will rip! Eat with the fish sauce or any other condiments that seems to go well with the rolls! Fish sauce recipe follows...

ingredients:
1/2 c. fish sauce
3 T. pineapple juice
2 limes, juiced
1 T. agave syrup
3 garlic cloves, minced finely
1 jalapeno, minced finely
1 T. chili sauce

1. Combine all and stir well.

A Challenge with Dumplings

Last night, me and my mom missed another food
in Korea: dumplings!!
Dumplings all have different shapes and sizes
depending on where they came from.
There are Polish perogies, Chinese dim-sum, and
our all-American chicken and dumplings.
Korean dumplings have its own name too, called
man-doo (만두). They are either steamed, or fried, or even
boiled. We put them in soups and stews also. One of
the man-doo soups I love the most would be
sticky rice and man-doo soup (떡만두국). It hits the stop on a cold
winter day!!

ingredients:
For the Dough
3 c. flour (Use unbleached all purpose flour please!!)
1 c. water, or until it makes a nice slightly sticky dough
1 t. sugar
1 T. salt
*Remember, you can use the pre-made crap, but I like homemade!*
For the Filling
1 pound of ground chicken or turkey, preferably lean
5~7 cloves of garlic, minced finely
3 scallions, minced
1 small zucchini, grated and salted with a tablespoon of salt to take out the water
2 egg whites, plus 1 whole egg
generous pinch of salt and pepper
1 18oz. box of firm tofu, squeezed until there's almost no water left

1. Lets make the dough:
   a) Combine flour, salt, and sugar in a large bowl
   b) Make a well in the flour and pour in the water once at a time!
   c) Mix in the flour slowly with a fork until it starts to take shape. Add in 1 T. of of water if too dry
   d) Flour the surface that you are working on and put the dough on, flouring the dough and your hands also
   e) Start kneading the dough by pushing and folding the dough. Keep doing this, about 10~15 time or until the dough bounced back at you when you slightly poke at it
   f) divide the dough into 4's. Take one piece and roll it out with a rolling pin until it is almost paper flat. Roll it out like you are making a pie crust. Like this:


  g) Sprinkle the dough with some flour and make circles out with a cookie cutter
  h) Repeat with the other 3 pieces of dough. Make sure you generously dust it with the flour because you don't want the circles to stick together. Lay them out on a large dish and clover it with a damp towel so the circles don't dry out.
2. Lets make the filling:
  a) In a non stick pan, add about 2 teaspoons of canola oil and saute the chicken or turkey until it is all done. Season it with a big ass pinch of salt and pepper, about 3 tablespoons. When the chicken is done, put it in a heat proof bowl to cool down before you squeeze the water out of it.
  b) When the chicken is cool, add in the zucchini and crumble in the tofu that had some of its water squeezed out. In a clean kitchen towel, add in the chicken mixture and squeeze the heck out of it. You don't need the moisture anymore, so through it out. Put the dry stuff in the bowl again.
  c) Add the scallions, garlic, salt, pepper, and the two egg whites. Mix well.
3. Take out the dumpling wraps and whisk the eggs in a small dish
4. Take one circle on your hand and put a tablespoon of the filling inside. Make sure to pack it in well. Moisten the edges with the whisked eggs and pinch them together. Make sure you take out all the air or it will blow up when you are cooking it.
5. Repeat with the other wrappers. Lay them on the dish that you put the wrapper dough on and cover it again with the damp towel until you are ready to cook them.
6. Now you can fry them, bake them for 10 min at 350, steam them, boil them, or freeze them for other uses, like adding them in soups and stews. Enjoy!!


Serve hot with soy sauce! You may also add other ingredients like I have on the example pictures.
I have added peaches that were mixed with 1 t. of arrowroot flour, 1 t. sugar, pinch of salt, and 1/2 t. of balsamic vinegar since I didn't have any lemons...

Yes!!!!!

YES!!! I'm not going to home coming!!!
I begged and begged and begged and soon my mom gave
up and said:
"Alright fine...."
She seemed a little disappointed, but I didn't care! I REALLY
did NOT want to go to that place of crap and $#!+ anyway!!
I feels happy again!!

Today, there were two tests.
1 in Spanish
1 in Algebra (ahem, EXCEL Algebra if you please!)
Strangely, I always get horrible grades when I say that I did pretty
good on them, so I'm just gonna say that I did ok on it...
Like, a B or something....
I know, you're going like, "Ok, so?" but this is a lesson to be learned people!!
You assume that you did good on something, and then you end up getting
fucked or something...

Oh and today there is a football game at school, and marching band will be there!
Not thtat I'm in marching band (I'd hate that) but my friends are there and I want to watch them play!!!!!
I bet it would be really fun!!

BananaZ!

Diet Day 1
Dr. Oz says that gluten could cause bloating
fer some people, and I'm one of those people...
Obviously that's not a good sign, so I got some
all-purpose gluten free flour!! I didn't get the Bob's Red Mill thang
but I got the King Arthur brand. I guess it's almost the same thing...

Crunchy Munchy Banana Bread
recipe adapted from Ina Garden (Veganized)



ingredients:
1 c. all-purpose gluten free flour
1 t. baking powder
1/2 t. baking soda
1/4 t. salt
1/4 t. xanthum gum
1 T. ground flax seeds plus 3 T. water, whisk and let it sit fer 2 min.
1/3 c. soy milk
1 c. agave syrup (or you can use sugar)
1/4 c. oil plus 1/4 c. apple sauce
1 t. vanilla extract
1 small mashed banana, or 1/2 a big one
1/2 whole banana, chopped
1/2 c. granola
1/2 c. walnuts, optional
1/2 c. chocolate chips, optional

1. Preheat the oven to 350 and oil a loaf pan. Sift the dry ingredients, sift the sugar if using.
2. In another bowl, combine flax, soy milk, vanilla extract, oil, and apple sauce. Mix well.
3. Make a well in the dry ingredients and slowly pour in the wet mixture once at a time. Mix well.
4. Fold in the whole bananas, nuts, and optional ingredients
5. Pour in the batter in the loaf pan and bake for 25-30 min. until golden brown. When you stick a tooth pick in the loaf, it should still be a little wet from the chopped bananas. The bread will be slightly firm and it will bounce back when you press at it gently.

You can make these as muffins if you want to! Serve at room temp. with some jam or somethen!
  

My Plan

Happy Happy day!!Gonna eat some sushi today!!
But the bad news is that I'm on a diet...
Well, that's now really BAD news, but it's hard!
My goal is to loose the 14 pounds that I have.

My Weight Now: 119lbs. (Yes, I'm a piece of lard...)
My Dream Weight: 105lbs.(I wish sooooo much!!)

I did this before, so I'll just have to do it again!

This is my plan:
Breakfast: 1 banana and a BIG cup of water
Lunch: Something under 300 calories
Dinner: Something under 200 calories
Plus: A small snack if I feel like dying!!

Hope this works... It's not as bad and hard as the one I did
before... The diet I had before was pretty hard core.

Here was my daily eating plan:
Breakfast: 1/2 an apple and allot of water
Lunch: 1/2 an apple and allot of water
Dinner: 1/2 an apple and allot of water
Plus: No additional food allowed!

When I was doing this diet, my mom got really
worried. Whenever she gave me anything else, (but 1/2 an apple)
to eat, I would spat it out. I don't want my mom to be
really worried about me, so I chose to do a healthier diet this time!
Sashimi is ok because of the lean fats, protein, and omega-3s.
A no-no would be: fried food, greasy foods, and big amounts of food.

Homecoming...

Yes, the homecoming dance is coming...
YUCK... All you do is dance (IF you dance) and
eat pizza. So, why would anyone pay $20 to
goof around and eat like a pig? Not me for sure.
But my princcess-ish mother claimed:
"Oh my dear Jamie! You are in High school and this
is your first homecoming dance!! You must go!"
and she planned to go shopping for a dress this weekend...
 $#!+.........!!!!!!! I really don't want to go...
I can't even dance! Plus, my best friend isn't going. Plus
I'm a go healthy so I don't eat greasy pizza unless it's
all organic and thin crusted... I'm too emberassed to
ask a guy out too. I'm not that pretty, trust me, and
I'm REALLY fat!! 115lbs.......!!!!!!! WHAT?!?!?!
This is bull $#!+..... I use to be 102lbs.....
a size zero fit me then.... Now I wear a size 3....
3 SIZES!!!!! SOS!!!!

Korean Food fer Mama 'n Me!!

Korea... Ahh, yes! Me and my mom's version of heaven..!
since Korea is my birth place and hometown, I have most of my memories
of good food there. This dish is one of my favorite comfort foods!

떡볶이 Or Tteokbokkie- Sauteed Rice cakes in Hot Sauce
Special recipe from me!!


This dish, tteokbokkie, is one of the most popular street foods in Korea. I hope you like it too!

(WARNING!! If you are planning to make this dish, I recommend you to have some milk with you..!)

ingredients:
3 c. *rice cakes, soaked in some water
1 c. *fried fish cakes, cut into cubes and boiled once in water in order to take out some of the oil. Boil for about 3~4 min.
3~4 cloves of garlic, minced
2 scallions, cut into 1 inch peaces
1/2 medium onion, cubed
*When you have all the things, you can add any veggies your want! I like to
add broccoli, cabbage, and some mushrooms! Very good stuff!!
2 BIG ASS tablespoons of *gochujang (go-choo-jang)
1/2 T. red pepper flakes or just chilly powder
3~4 heaping tablespoons of agave or any other sticky syrup, depends how sweet you want it
Roughly, 2 c. water

1. Put water over medium high heat
add the gochujang, red pepper flakes, and the agave. Stir well
2. When it comes to a boil, turn to low heat and take out the soaking rice cakes
out of the water, (make sure you take out most of the water) and add it to the broth.
3. Then add in the fish cakes. Stir around for 1 min. and add in the veggies
4. Now all you have to do is to stir it around frequently, adjust the taste, and wait until the veggies and the rice cakes are done. The rice cakes should be soft, squishy, and sticky. People, this is not Italy. That means, do not cook the rice cakes like pasta. Don't cook it until the rice cakes are al dente, ok?

Serve hot with a side of milk! If I were you, I would eat it with watermelons..!
*You can find these of the ingredients are you local Asian markets.  

Salad

I love Giada De Laurentiis , Bobby Flay, Michel Simon, and
Artie Sequeria!!! She is such a good cook!!!
Ok, this is only a salad dressing, but it is really, really good!
It's nutty, sweet, and salty.

Pistachio Dressing
recipe by Artie Sequeria

I didn't have a lot of pistachios, so I did 1/4 c. pistachio and 1/4 c. almonds...
That was pretty good too... Here's the original recipe:

ingredients:
1/2 c. pistachios, roasted and unsalted
2 cloves of garlic, if you don't like garlic use 1
Juice of 1 lemon
1/2 t. hot sauce (sriracha is best for this!)
1/2 c. hot water
salt and pepper to taste
1/2 c. canola oil
1 T. extra virgin olive oil

1. Combine all the ingredients and blend into a smooth,
hummus like consistency.

Dress your salad with this dressing or use it was a healthy dip! 
Enjoy!

Labor Day Break!!

Yippie!! Labor Day Break!! Happy, happy!!
If I feel happy, there will be breakfast for lunch!!

Mochi + Waffle = Moffle
I had something like this in Korea

This is a MUST TRY RECIPE!!!
This WILL make a person horny at the breakfast table...

ingredients:
1/2 c. sweet rice flour
1/4 c. flour
1/4 c. tapioca flour
1 t. baking soda
1 T. sugar
1/4 t. salt
2 T. extra virigin olive oil
1/2 c. soy milk
1 T flax meal plus 3 T. water, whisk and let it sit for about 3 min
1/4 c. water
1/4 t. cinnamon

1. Combine the dry, add the wet
2. Make the waffles according to your
waffle iron. I used a waffle pan, so I added about 1/4 to 1/3 cup
per waffle

This was the BEST waffles I have EVER made!!!
This was inspired by the waffles I had in Korea.
It was at a cafe called "Nothing Cafe". I know, wierd huh?

Peachy Oat Cookies

(it's just veganized)



ingredients:
3/4 c. flour
1/2 t. baking soda
salt
1/4 c. oil
1/4 c. apple sauce
1/2 c. agave syrup
1 T. flax meal plus 3 T. water
1 1/2 c. rolled oats
1/2 c. chopped dried peaches
1/2 c. nuts of choice
1/2 c. chocolate chips or chunks (optional)

1. Heat oven to 350 and line 2 baking sheets with parchment paper. Place the upper and lower third racks in the oven (whatever that means...). I didn't use 2, I just took turns 'cause my oven is so freak'n small...
2. Combine flour, BS (baking soda, not bull sh**!!), and salt and whisk.
3. In another bowl, mix together the oil, apple sauce, and agave. Add the flax and water mixture.
4. Gradually add in the flour mixture, oats, peaches, nuts, and the chocolate if desired. Mix well
5. Ok, this is for you people using 2 sheets:
Make 20 balls from the dough and place them evenly on the baking sheets. Press down to make a flat circle.. about 1/2 inch thick. Bake for 10~15 min. It should be golden brown.
6. This is for the people making cookies with 1 sheet:
Make 20 balls (obviously) and put half of the amount on the sheet (duh).Press down. Bake for 10-15 min and repeat with the other batch.
Make sure it sits for at least a min. on the sheets before devouring them!!

People who know me probably know I LOVE peaches, so I get pretty horny after eating these~!
Serve with cold soy or regular milk.

French Toaster Sticks, Veganized!
recipe from VegWeb.com (I added some other stuff though...)



This is the by far, the BEST vegan french toast that I have ever had
in 15 years!!! It's slightly crunchy, with a buttery softness....
Pretty sexy, right?

ingredients:
1/2 c. soy milk
1/2 t. vanilla extract
2 T. oil
1/4 t. salt
1 T. flour
2 T. tapioca flour, or any other starch you might have in hand
3 T. sugar
1/4 t. pumpkin spice
4 slices of wheat bread

1. Combine the first 8 ingredients and mix well
2. Cut each bread into 4 sticks and dip them into the
batter
3. Fry on medium heat until golden brown on each side

Eat with agave, or maple, syrup and with any other condiment you want.
I ate it with peanut butter and jelly, and it was the BOMB!! I had it also
with a side salad 'cause I like salads, and it was lunch time.

Chocolate Quinoa

ingredients:
1 c. quinoa
2 c. water
3 T. agave
2 T. cocoa powder, unsweetened
Sliced fruit and nuts (optional)

1. Set water and quinoa and cook for about 15 min.
(or until the water is absorbed) This is just like cooking rice!
2. Add in the cocoa and the agave when finished. Mix well.

Serve with your favorite fruit or nuts, but this is optional!

This is a very good website to get great vegan and/or vegetarian food!!
Most of my recipes are from this website.
A lot of the recipes are very simple to make, and it is budget friendly. I hope

BREAKFAST FOR DINNER!!!!

Oat Pancakes (gluten free, fat free!!)
recipe from Whole Foods.com


ingredients:
1 c. oasts
1/2 c. apple sauce
1 T. flax meal plus 3 T. water*
1 T. agave or maple syrup (I used agave)
1 T. oil

*The flax seeds are only an egg substitute!! You may use 1 egg
if you don't have flax seeds!!

1. Combine all, except for the oil, in the blender and puree until smooth
2. Heat the pan on med. heat and add 1/2 of the oil.
3. Make the pancakes by two tablespoons at a time. This makes about
five pancakes
4. Repeat with the other 1/2 of the oil

Serve with more agave for maple syrup! I personally like it with peanut butter and jelly.

Today...

Eh, nothing much today..... I think I should bring my camera to school now!

Chocolate Peanut Butter Oatmeal


This is one sexy oatmeal.... Have a bowl of this in the morning and you'd be in the mood....

ingredients:
1/2 c. old fashion oats
1 c. water
1/3 c. milk or soy mlik (I used soy)
salt to taste
A little less than a tablespoon of sugar (depends on how sweet you want it)
1/2~1 t. cinnamon (I added 1 teaspoon)
1/2~1 t. cocoa powder, unsweetened
1 t. peanut butter

Add some nuts ontop and it's dessert for breakfast!!

1. Simmer the oats and the water untill the water is almost all absorbed. Like this picture:
                      
2. Slowly add in the milk and stir well.
3.After about a min. add in the cocoa and peanut butter
4. Simmer for about another min. and serve hot

Microwave Vegan Brownie

That's my go-to website for great vegan meals!!
(I swear, even if it is called "vegan" it is NOT gross!)

Microwave Vegan Brownies (or Brownie on the Run, or OMG Brownie)

I found this recipe, and I keep making them!! All my non-vegan friends and
family members love it!! This is a very suckish picture of my brownie 'cause I messed it up...
But I swear it is REALLY good when you do it right!!!



ingredients:
1/4 c. flour (garbanzo-fava was GREAT)
2 T. agave, or any sweetener. You can add more if you want to...
Pinch of sea salt (this is optional but I really recommend it!)
1/8 t. baking powder
1 heaping tablespoon of cocoa powder, unsweetened
2 T. soy milk or water
1 T. oil
you may add any nuts if ya want.

Super facil personas!! (Super easy people!)

1. Combine dry
2. Add in wet
3. Mix well, but leave some chunks in it as if you're making a
pancake. (Now stir in the nuts if you wanted them)
4. Microwave for 1~3 min. But this depends on your microwave, and your
taste. 3 min. is when you want it dense, and 1 min is when you want it moist.
I like it moist.

Serve with vegan vanilla ice cream or with raspberries!

Hey everyone!! Ma name's Jamie Lee, and I am a go healthy freshmen at AZ!
Let me tell you somethings 'bout myself: I love peaches, I love to bake and cook,
I love all my friends, and I love my family! (Especially my mommy!) This blog will
be posted with several delicious recipes (I hope) each time I make a really good
meal! Here is my first one:

Peach Glazed Chicken (Recipe from Bobby Flay) <=== Luv this guy!!!



I made this in a few months ago, but I really wanted to post this one since
it was soooo delish!!

ingredients:
2 chicken breasts
1 c. peach jam
2 T. oil (plus 1 T. for other use)
1 big ass garlic clove, minced
1/2 T. mustard
1/2 of a jalapano (more if you want), minced also
1 T. soy sauce
salt and pepper to taste
2 peaches

Now, lets keep this short and simple, 'cause it is anyways...

1. Combine everything except for the chicken breasts and the 2 whole peaches. Mix well.
2. Rub the chicken breasts with salt, pepper, and oil
3. Pan fry or grill (I pan fried) the chicken and smother (and I mean SMOTHER) your chicken
with the peach sauce.
4. Brush some oil on the peaches and pan fry or grill also. You can add some sauce if you
wish to.

(OMG that was so easy!! Ya?)
